Spring Rolls-Popiya

Bismillahirrahmanirrahim..
Let us all start our baking today,
Reading surah ali-Imran verse 200

O you who belive! endure and be more patient (than your enemy), 
and guard your territory by stationing army units permanently at the places from 
where the enemy can attack you, and fear Allah, so that you may be successful.




Ingredients that you'll need::
 For the Spring Rolls>>

2 tablespoon of olive oil/vegetable oil
2 cloves of garlic, finely chopped
1 onions, cubed
2 small yam bean (sengkuang) finely sliced
¼ of cabbage, finely chopped
1 stick of carrot, coarsely grated 
2 eggs*
2 sausages*
1 Tbsp of griblack pepper
pinch of salt for taste
A pack of spring rolls wrapper (6 inches)

*eggs and sausages can be substitute with
  chicken (cubed) or prawn (chopped) at a suitable quantity.

Directions.

1. In a pan, heat up the oil.   

2. Beat the eggs and throw in the pan.
    Stir vigorously to get scrambled eggs.
    Take it of the pan when cooked.

3. Saute the sausages in the same pan and
    take it of the pan when cooked.

4. Drizzle some oil and sauté the chopped onion and garlic.

5.  Throw in the finely sliced yam bean, finely chopped cabbage 
    and grated carrots into the heated pan. Sauté the vegetables.

6. Add back in the scrambled eggs and sautéed sausages.

7. Sprinkle down the black paper and season the stir fried mix. Put of the heat.

8. Making the Spring Roll using 8 easy steps.

1- SCOOP
Scoop up a spoon full of the stuffing and put on one corner

2-FOLD

 3-ROLL


4-FOLD THE LEFT
tightly fold it

5-FOLD THE RIGHT 

tightly fold it

6- ROLL again


7-GLUE
apply some of the glue

8-ROLL till the end
neatly fold it until the tip

9. Heat up oil in a frying pan. And fry it until it turns golden brown in colour. 

For the sauce>>

1 cup of water
1 clove of garlic, smashed
4 Tbsp of chilli paste
4 Tbsp of sugar
1 Tsp of Tamarind paste
Pinch of salt
1½ Tbsp of cornflour, 


Directions.

1. Combine all the ingredient except cornflour, and bring it to a boil.

2. Mix the cornflour with a few tablespoon of water, just to turn it into a liquid mixture in a separate bowl.

3. Add the cornflour liquid into the boiling mixture, and let it all boil up together for a few minutes. 

4. Take of the heat. Drizzle upon the spring rolls.

Baked Macaroni

To make the Tomato sauce,
heat oil in a pan and sauté the shallots and garlic
until an aromatic aroma can be smelt.
Add the blended tomatoes, the Kimbal spaghetti sauce (B&G)
and a tin of tuna and cook over a medium heat.
Add Salt and pepper to taste.

Meanwhile,
Boil the elbow macaroni in a saucepan of boiling salted water
until just undercooked.
Drain Well.

Combine the undercooked macaroni with the tomato sauce.
And mix well.
While cooking over a low heat,
Add in half of the mozzarella cheese.
Mix a little and Put off the heat.

Take an ovenproof dish.
Put all the yummy treasures in .
Sprinkle the other half of the splendid mozzarella cheese
on top.

Throw it in a preheated oven.
190 degree celcius
for 25 minute.
or
until the mozzarella cheese scrumptiously 
turn golden brown n bubbling.

Vanilla cupcake with berry icing

         

Bismillahirrahmanirrahim.

Let us all start our baking today,

O you who belive! endure and be more patient (than your enemy), 
and guard your territory by stationing army units permanently at the places from 
where the enemy can attack you, and fear Allah, so that you may be successful.




Ingredients that you'll need::

For the cup cake>>


¾    cup of granulated sugar

1     stick of butter
1     Tsp of vanilla extract
2     Eggs
1⅓  cup of all-purpose flour
2     Tsp of baking powder
½    Tsp of baking soda
⅓    cup of milk

Steps>>

1. Preheat your oven to 175 degree celcius.
    Line a 12 cup muffin tin with liners, 
    and set aside

2. In a small bowl combine all the dry ingredient
    except  sugar, into a small bowl and sieve 
    the ingredient.

3. In a large bowl mix, beat the butter and 
    sugar until creamy.

4. Add in vanilla extract.

5. Followed by two eggs. 
    (put one after the other)

6. Add in the dry ingredient and the milk. 
    Just mix to combine and don't over mix.

7. Using a large ice cream scoop, 
    or simply a spoon. Divide the batter 
    evenly in the prepared muffin tin.

8. Bake for 15 to 20 minutes or until a 
    toothpick inserted in the center of the 
    cupcake comes out clean.












For the icing..
I call it Butterish royal icing>>

2     egg whites
2     cups of confectioners' sugar
1     Tsp of lemon juice
        *or lime juice 
2     Tbsp of butter
4-5  Tbsp of unsweetened 
        strawberry jam
        *or any berry jam you wish



Steps>>
1. Separate the eggs, yellow and white.

2. Combine the egg whites and the
    confectioner's sugar. Whip it on medium speed
    for about 5 minutes or until an opaque
    and shiny mix is obtained.

3. Add in the lemon juice. And beat
    for a few minutes.

4. Mix in butter and strawberry jam.

* put the mixture in a piping bag and simply pipe up 
   any pattern you wish on your cup cake.  

**Optional decorations on top of the icing**
- a few raspberry on top
- a fan cut strawberry     
- own inspirational yummy decoration is best !.
